Home made crunchy muesli

This makes a change from ordinary muesli or porridge. The nuts, seeds and coconut oil contain protein and fats which provide slow releasing energy to keep you full all morning. Have with milk or yoghurt and some fresh fruit, or mix with other cereals for an interesting breakfast!

INGREDIENTS:

2 cups of oats (jumbo or ordinary)

2 cups of any nuts (almonds, pecans, hazel nuts, cashews, walnuts, Brazil nuts), pulsed or partially crushed.

2 cups of whole seeds (pumpkin seeds, sunflower seeds)

2 cups of ground seeds (sesame, flaxseeds, chia seeds)

3 table spoons coconut oil

2 table spoons maple syrup

2 teaspoons of cinnamon

METHOD

Put all the dry ingredients into a big bowl and stir.

Melt the coconut oil and maple syrup over a gentle heat and pour over the dry ingredients. Stir well.

Spread onto a lined baking sheet and bake at 120oC for 45 minutes or until the muesli is crispy.

Cool and store in an air tight jar.
